What's for Dinner, Mon., April 6, 2026

I turned the rest of my cauliflower puree into soup by adding leeks, herbs and chicken broth.

Cornbread--new batch. I put in Cheddar cheese cubes and chopped jalapenos.

Small baby arugula salad with Parmesan and vinaigrette.

Kombucha, unflavored.

My friend gave me an incredible carrot cake! Lots of cream cheese frosting. That's dessert.

I’ll try first with some tuna salad, avocado, sushi rice, and avocado. Looks simple and yummy!
Serving with a big green salad, too.

My daughter's family hosted the whole crew team for 'carbing up' the day before the regatta. Lots of pasta, lots of leftovers I've had some the last 3 days, still going strong and not a bit tired of it

This is yesterday's dinner rewarmed

Baked Cod fillet
Asparagus spears
Blend of brown rice and white quinoa with black beans, corn, red bell pepper and southwest sauce

TJ is still trying sleep off her overnight shift. Ducky is not helping by letting us know about every passing vehicle and stray cat.

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, chopped broccoli, sliced mushrooms and minced garlic. When almost done I added chickpeas, black beans and dried oregano, basil and fresh chopped parsley. While that was cooking I microwaved a small spaghetti squash and scooped out the strands which are the substitute for wheat pasta. Vegan parm on top after plating. Strawberry sundae for dessert. Cheers!🥂

green beans, and crescent rolls. Salad later. This is my birthday dinner a day early.

Tomorrow is my birthday, and we plan to eat pizza at the Golden Nugget.

Atkilt Wat--Ethiopian vegetable stew of cabbage, carrots, onion, and potatoes, seasoned with turmeric, cumin, salt, and pepper.

Beverage of choice--I'm having cucumber limeade.

And NO dessert.

Lord, I will be glad when Lent is over!
