4. I have 2 sets of files, 1 by surname and 1 by county

I found it too much to keep by specific person as I had so many people. Also I would need duplicates of census records for father & son / husband & wife which I found wasteful.

County records are, obviously, county-wide lists that may have multiple family information. That way they are easy to find when I have a new surname to look up.

I would be interested in learning how others are using One Note. I quit because I wasn't sure how to print or export to send info to others.
